This Administration Won’t Be Over Easy

 I made the best breakfast the last 2 mornings. A sweet potato hash with turkey sausage and two fried eggs. I hate using more than one pan so I make it all in one medium sized skillet. I baked a giant sweet potato in the microwave on Friday, then left it in the fridge so I could easily cube it up and fry it off in the skillet in some cooking spray. I used half the sweet potatoes for one breakfast and the other half the next day. Then I microwaved a turkey sausage patty for 30 seconds (just to thaw) chopped it up and placed it in the pan with the sweet potatoes and cooked then all together until they were heated through. I kept the seasoning simple, just salt and freshly ground black pepper. I reduced the heat, pushed the hash to the side and added some fakey butter to the pan “country crock of lies” or “I can’t believe it’s not democracy” whatever you’ve got on hand. Crack the two eggs in there and then because I like a fully cooked white and a runny yolk, I put a close fitting lid down over the food and let it steam on low for a couple of minutes till egg was my desired amount of doneness. 

I cut the little thin frizzled bits of egg white off for my dog. That’s why I’m her favorite. ❤️ 

The secret to making a hash of any kind is to start with cooked potatoes. You can use raw but you better cut them into tiny pieces and be prepared to stand at the stove for 30-40 minutes. I love using microwaved potatoes or even canned potatoes in a pinch. You can also add onions to your hash but I just didn’t want to chop anything else this morning. You can also use bacon bits instead of sausage, vegetarian sausage or even skip any type of meat and use onion, bell pepper and potatoes. I have also made a fine breakfast hash out of frozen tater tots or even leftover fast food French fries.  

Making breakfast is like participating in democracy. You may not have the exact ingredients you were hoping for, but you use what’s available and you make sure everyone gets fed.
